1. Chicken Masala Curry
Ingredients:
- 500g chicken, cut into pieces
- 2 tablespoons Chicken Masala 001
- 1 onion, finely chopped
- 2 tablespoon garlic paste, or chopped
- 1 tablespoon ginger paste, or chopped
- 2 tablespoons oil
- Salt to taste
- Fresh coriander for garnish
Instructions:
- Heat oil in a pan over medium heat.
- Add the chopped onions and sauté until golden brown.
- Add ginger & garlic.
- Add the Chicken Masala 001 and stir for a minute to release its aromatic flavors.
- Introduce the chicken pieces and cook until they are browned on all sides.
- Let it simmer for 20 minutes, allowing the chicken to absorb the spices.
- Garnish with fresh coriander and serve hot with rice or naan.

2. Chicken Masala Marinade & Grilled Skewers
Prep Time: 20 minutes (+ 2 hours marinating - optional) | Cook Time: 15 minutes | Serves: 4
Ingredients:
- 2 lbs chicken breast or thighs, cut into cubes
- 2 tbsp chicken masala blend
- 1/4 cup plain Greek yogurt
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt to taste
Instructions:
- Mix masala blend, yogurt, lemon juice, olive oil, and salt in a bowl
- Add chicken pieces and coat thoroughly
- Marinate in refrigerator for at least 2 hours or overnight
- Thread chicken onto skewers
- Grill over medium-high heat for 12-15 minutes, turning occasionally
- Serve with mint chutney and basmati rice
3. One-Pan Chicken Masala Rice
Prep Time: 10 minutes | Cook Time: 25 minutes | Serves: 6
Ingredients:
- 1.5 lbs chicken thighs, boneless and skinless
- 2 tbsp chicken masala blend
- 1.5 cups basmati rice
- 3 cups chicken broth
- 1 red onion, sliced
- 1 bell pepper, chopped (or any veggie of choice tbh)
- 2 tbsp ghee or oil
- 1/2 cup frozen peas
- Salt to taste
Instructions:
- Season chicken with 1 tbsp masala blend and salt
- Heat ghee in a large oven-safe pan, brown chicken on both sides, remove and set aside
- Add onion and bell pepper to the same pan, cook until soft
- Add rice and remaining masala blend, stir for 2 minutes
- Add broth, bring to boil, then nestle chicken back in
- Cover and bake at 375°F for 20 minutes
- Add peas in the last 5 minutes of cooking
- Let rest 5 minutes before serving
