1. Chicken Masala Curry

Ingredients:

  • 500g chicken, cut into pieces
  • 2 tablespoons Chicken Masala 001
  • 1 onion, finely chopped
  • 2 tablespoon garlic paste, or chopped
  • 1 tablespoon ginger paste, or chopped
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander for garnish

Instructions:

  • Heat oil in a pan over medium heat.
  • Add the chopped onions and sauté until golden brown.
  • Add ginger & garlic.
  • Add the Chicken Masala 001 and stir for a minute to release its aromatic flavors.
  • Introduce the chicken pieces and cook until they are browned on all sides.
  • Let it simmer for 20 minutes, allowing the chicken to absorb the spices.
  • Garnish with fresh coriander and serve hot with rice or naan.

2. Chicken Masala Marinade & Grilled Skewers
Prep Time: 20 minutes (+ 2 hours marinating - optional) | Cook Time: 15 minutes | Serves: 4

Ingredients:

  • 2 lbs chicken breast or thighs, cut into cubes
  • 2 tbsp chicken masala blend
  • 1/4 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt to taste

Instructions:

  • Mix masala blend, yogurt, lemon juice, olive oil, and salt in a bowl
  • Add chicken pieces and coat thoroughly
  • Marinate in refrigerator for at least 2 hours or overnight
  • Thread chicken onto skewers
  • Grill over medium-high heat for 12-15 minutes, turning occasionally
  • Serve with mint chutney and basmati rice

3. One-Pan Chicken Masala Rice
Prep Time: 10 minutes | Cook Time: 25 minutes | Serves: 6


Ingredients:

  • 1.5 lbs chicken thighs, boneless and skinless
  • 2 tbsp chicken masala blend
  • 1.5 cups basmati rice
  • 3 cups chicken broth
  • 1 red onion, sliced
  • 1 bell pepper, chopped (or any veggie of choice tbh)
  • 2 tbsp ghee or oil
  • 1/2 cup frozen peas
  • Salt to taste

Instructions:

  • Season chicken with 1 tbsp masala blend and salt
  • Heat ghee in a large oven-safe pan, brown chicken on both sides, remove and set aside
  • Add onion and bell pepper to the same pan, cook until soft
  • Add rice and remaining masala blend, stir for 2 minutes
  • Add broth, bring to boil, then nestle chicken back in
  • Cover and bake at 375°F for 20 minutes
  • Add peas in the last 5 minutes of cooking
  • Let rest 5 minutes before serving
